The good reputation and fame of this wine is grounded in Aubert de Villaine, a respected and known wine-personality in the Burgundy.
The dry whtie wine with a lot of acidity and an unusual fullness, spice, and fruit reminds of Pinot Gris, but this wine hasn't got the same potential for ageing. The appellation has been in existence since 1979 exclusively for the Aligoté-vine.
On the valley's slopes one finds brown limestone earth. In addition to the Aligoté up to 14% (permitted) Chardonnay is cultivated.
The white wine production is traditional. To preserve the fruit of the wine the wines are usually filled to the bottle in the spring.
