This wine, whose origin is in Rome, has the reputation of tasting like lemonade. It is sweet and juice-like and has many faces, five DOC among them, and several different styles.
The Lambrusco can't be said to have a steadfast character. The only thing they all have in common is their pearliness. The palette reaches from sweet, sparkling, awful wines, to dry, elegant pearly red wines. The Lambrusco di Sorbara is among the best.
The five DOC for Lambrusco are Lambruso di Sorbara, Lambrusco Reggiano, Lambrusco Salamino di Santa Croce, Lambrusco Grasprarossa di Castelvetro, and Lambrusco Montovano.
The Lambrusco is traditionally made after the Méthode Rurale. This means the wine is bottled before it is finished fermenting. Today finer methods are also used. Carbonic acid is sometimes added later after the lemonade method.
Lambrusco is made from Lambrusco di Sorbara, Lambrusco Salamino, Lamrusco Grasparossa, and some Uva d'Oro vines.
