The Chianti is one of the most famous wines in the world. Only red wines may carry its name, white wines are called Toscana Bianca or Bianco della Toscana.
Chianti's good reputation is partially based on the popularity of light, quickly ripened wines, even though the quality is subject to certain deviations. The red wines' structure varies from deep red, stiff, and fruity, to light in colorand structure. They both have strong acidity. Good vintages can be stored up to ten years, The classic blend is two blue and two white vines. The parts used today are 75-90% Sangiovese, 10-20% Canaiolo Nero, 5-10% Trebbiano and Malvasia, and up to 10% other red vines. The wines used to made after the "Governo-Method". Today the Chianti is produced in temeperature-controlled noble steel tanks.
The entire region has been classified as DOCG since 1984. Since then the white wines are deminishing There are seven origin appellations: Classico, Colli Aretini, Colli Sienesi, Colli Florentini, Colli Pisane, Montalbano, and Rufina. After two years storage the Chianti may carry the byname "Vecchio", after three years "Riserva".
