Even without the DOC status, this modern wine enjoys great popularity. Low alcohol content, freshness, and lightness make it special.
The Tuscany region has been known for its red wines since the Middle Ages, and their part white vines has always been important. The white Trebbiano-grape is still one of the most-cultivated vines in the region. Since the raise of the Chianti to DOCG status in 1984 the part white grapes is being reduced. The resulting open vineyards are being used by an influential group of producers like Antinori, Frescobaldi, and Ruffino, to make a new wine the modern Galestro. The wines' freshness is kept through cold fermentation and reductive processing.

The Galestro is a dry white wine with merked freshness and lightness, and low alcohol content of 10.5% at most. The low alcohol content is a reason that the Galestro has remained a Vino da Tavola ist.

The vines grow on mostly limestone earth. The msot important vine s the Trebbiano. Small amounts of Pinot bianco, Sauvignon Blanc, and Chardonnay are also cultivated.
