This old wine, that even Michelangelo lauded, has recently adapted old-fashioned, slightly oxidized style to today's wishes, and is now made in an increasingly light, clean and still original style.
The dry white wines are made two different ways: Traditionally with mash fermentation, which gives the wiens maximum power and aroma. After fermentation the wine is stored for several years in oak barrels. This gives it a slightly oxidated, slightly bitter bouquet, and a bitter taste as well as a deep-yellow color.
Modern production is most-fermentation without mash at low temperature. The wines are kept in airtight steeltanks until filling. This makes cleaner, lighter, fresher wiens with only a little bitterness and a rather neutral flavor profile.
This area has had DOCG status since 1993. DOC status for San Gimignano wines are for Novello, Riserva, Sangiovese, Vin Santo, and Vin Santo Occhio di Pernice.
The vines grow on well-drainedsoils, limestone and Galestro.
