Bishop Defuk moved here in 1000 AD, to enjoy the excellent wine. In modern times this wine leaves little to enjoy. The modern production methods are improving it though.
Bishop Defuk made a trip through this region in the year 1000. He was great lover of wine and one of his servants was increasingly asked to travel ahead of the group and mark the doors of those hostels that made especially good wine. Est! means as much as "it is here". When the Bishop finally reached Est!Est!!Est!!! in Montefiasco he settled down, and stayed.
Though the grape-basis is made of Trebbiano, the wine rarely has the typical aromatic bouquet for this grape or an especially concetrated flavor. Until recently the wines were rather flat, with little fruit acidity and a strange bitterness in the finish. The wines were often critisized. Today the wine is raised reducltively, and then carefully filled into bottles. The refreshing acidity and clear flavor in good vintages lets one notice these improved production methods.
The area has had DOC status since 1966 for the Trebbiano Toscano (locally called Procanico), Malvasia, and Rossetto.
