The Frascati carries an improvemtn of Italy's white wines. It's the Italian version of Austria's 'Heuriger' (new wine).
The Frascati has been the daily drink of the Romans for several thousand years. The small town of Frascati is full of taverns that are visited over the weekends. The best vintners make their Frascati with a certain spice, which can compre itself to that of Italy´s finest wines. The region has had DOC status since 1966.
The Frascati is a dry white, with a shimmering green hint. The acidity sways depending on the producer and the harvest. The flavor is fruity, clean, and fresh, and very light. This semi-dry wine´s sweetness smetimes seems plump, or in better cases, as an elegant complement. The sweet version is called Cannellino, it has a noble-rot quality, and is very rare. Sparkling wines are alos produced.
Malvasia Bianca di Candia, Trebbiano, Greco, and Malvasia del Lazio vines are traditionally fermented: kept in the peel just like the redwines and macération pelliculaire.
