This wine's popularity is limited to Sardinia. Tourists prefer it to the Cannonau, and is usually aged lightly.
This vine differs from the Cannonau in its neutral and extract. The best wines have light red color, fruit, a pleasant bouquet and medium full flavor. The flavor develops after 4-5 years storage. With increasing age the wine gets softer, with an orange hint,, and pleasant length of taste.
It has been a DOC since 1972. The other DOC Monica are called Monica di Cagliari, and are mostly processed sweetly. After one year storage and al least 12.5% alcohol content the wine is called Superiore. There are also naturally pearly wines, called Frizzante.
The Monica vine is fairly neutral and only makes tasty wines if the harvest is small. The small harvest is caused by the 'alberello' tying technique.
