Spain's famous sparkling wines are made here.

The word 'cava' mean cellar to Catalonians. This is what Catalonian and Spanish sparkling winesa re named. The most important regions for the production of Cava wines are some areas in Girona, Barcelona, Tarragona, Lleida, Zaragoza, Navarra, Alava, and La Rioja.

DO Cava is the name for all large and small territories that make Cava wines. Today the company Codorniú is the most important and traditional company in the Cava industry, since they led the way originally.

The most important vines for Cava production are cultivated in Catalonia: the white Xarel-lo, Parellada, Macabeo, and sometimes Chardonnay. Outseide of Catalonia only Macabeo is used. There is also a rosé Cava, that is made from a mixture of the red Cariñena and Garnacha Tinta.

One mustn't forget, that not all sparkling winesa re Cava wines, since not all of these sparkling wines are made the champagne method (called 'método tradicional' in Spanish), that means that the first and second fermentation of the Cava wines must be done in Champagne bottles.
