These good storable wines from Pallette have an excellent local reputation. The small amount produced makes this appellation uninteresting for export.
Palette's local reputation is good. The reason it is only local is because the wines aren't suited for transport and only small amounts are produced, so the wines are only consumed regionally. Together with Bandol, Cassis, and Bellet, Palette belongs to the four traditional appellations in Provence. There is no internal classification.

Red, white, and rosé wines are made that gain in taste and character during the 10-15 years storage. Red wines dominate over half of the wine production. Fairly dark wines with a spicy aroma of pine and violets are made from the over 25 regional vines. The taste proves finesse and medium fullness. The vineyards are being decimated by the growing town of Aix. Only one fourth of the original area is still being used.

Provence's soil is singular, and is made up of the local limestone „Calcaire de Lagesse“. It makes for a certain finesse and complexity among the white wines and give the palette wines their character. There are 25 permitted vines, Gren and Mourv are especially loved for rosé wines. Also Syrah, Plant‘Arles, Manoscan, Clairette, Ugni Blanc, Grenache Blanc, Sém, Muscat Blancs, Pascal, and Araignan are grown here.
