Many of the former vineyards have fallen into the hands of real estate agents, and are now the gardens of villas, that inspired several artists such as Matisse. Cassis is the area's oldest appellations. There is no internal classification.
Wine production's concentration lies on white wines, that are raised from sand and clay soils blended with limestone. But red and rosé wines are also made. The red wines are kept in rustic style, and go well with meat and cheeses, and cannot be stored for too long. The white wines are what are really interesting though. Their bouquet reminds of herbs and aromatic spices. They are mostly dry, sometimes the acidity is too low.
The vines grown are Grenache, Mourvèdre, Cinsault, and Carignan for red wines and Ugni Blanc, Clairette, Bourboulenc, Pascal Blanc, Marsanne, and Sauvignon for the whites.
