Since it was risen to an AOC in 1977 good wines are made. The wines develope to better, storable wines with stable fruit. Some wines are stored in oak barrels.
One used to concentrate on the production of a non-demanding rosé wines for tourists, but with the raise to AOC status the vintners' ambitions were awakened, so that they are now increasingly concentrating on the produciton of quality wines. There are no internal classifications.
Many different wines of various colors are made here. Several red wines have separated themselves from Provence's others by their strength of weight. The former problem of acidity in the white wines was solved with the switch to modern production-methods. Now one can find white wines of good quality with fine acidity. The soil conditions vary, which results in the wide assortment of wines.
The vines are typical for Southern France: Mourvèdre, Cinsault, Syrah, and Carignan. After the trend of the 1980's of replacing the traditional local vines with Cabernet and Merlot, one is returning to the 'old vines', and is rediscovering local vines such as Tibournen, Plant d‘Arles, and Calitor.
